
Rainbow Cupcakes
For Ellas 6th birthday we made rainbow cupcakes, they were an absolute hit at the birthday party! The trick to get them nice looking was to make the frosting hard enough to hold the rainbow candy in place, also to use a piping bag when you decorate the frosting clouds.

Ingredients
Cupcakes
- 3 Eggs
- 2,5 dl Sugar
- 1 tsp Vanilla sugar
- 100g Butter
- 1 dl Milk
- 3,5 dl Flour
- 2 tsp Baking powder
- 1 pinch of salt
- 2 dl Chocolate chips
Frosting
- 60g Butter
- 5 dl Icing sugar
- 1 tsp Vanilla sugar
- 1 tbsp Lemon juice
- 100g Cream cheese
- Blue food coloring
Rainbow Candy for decoration
Instructions
- Set oven to 175°C
- Whip eggs, sugar and vanilla sugar.
- Melt the butter, add the milk and add the mix to the egg batter.
- Mix flour, baking powder and salt in a separate bowl, then carefully add it.
- Mix in the chocolate chips
- Place cupcake liners on a baking tray and fill with 2/3 of batter
- Bake in 15 min, let cool
- Mix butter, icing sugar, vanilla sugar, cream cheese and lemon juice
- Divide the frosting and color one part with blue food coloring
- Decorate the cupcakes with blue frosting as a base and white for clouds the add the rainbow candy on top
