
Lussekatter cats
On Friday we celebrate Lucia here in Sweden and then we eat “Lussekatter”. They are saffron buns shaped like a S and are super yummy! I have no idea why they are called cats. My kids were asking about it and I tried to look it up, but it has something to do with the devil?! It sounded a bit complicated to explain to a 4 and a 5 year old so we made them looking like yellow cats with rasin eyes, nose and chocolate whiskers.

Ingredients
- 50g Yeast
- 175g Butter
- 1g Saffron
- 2dl Sugar
- 5dl Milk
- 0,5 tsp Salt
- 900g Flour
Topping: Egg & rasins
Instructions
- Melt the butter & add saffron and milk
- In a bowl divide the yeast and add the buttermilk mix little by little
- Add sugar, salt and almost all of the flour and work the dough i a machine for 5 min
- Cover with a towel and let rest for 30-45min
- Shape into buns (cats?) on a baking tray with a baking sheet
- Cover with a towel and let rest for 30-45min
- Brush with egg and put rasins on top
- Bake for 10min at 200°
- Let cool, enjoy!
